From his beginnings working in a small, family-owned Italian restaurant in Detroit, to The Detroit Athletic Club, Marriott Hotels, Marshall Fields and more, Chef Ron Calasanti brings a wealth of culinary experience to all our dining services. The way he sees it, our residents are the toughest group to please of all those he’s faced over the years.
“Here at Henry Ford Village, we enjoy serving the same guests every day,” he says. “At any other restaurant you’ll have your regulars who are there a lot, but nothing like every day. Serving the same guests every day – sometimes two or three times a day – demands great focus on creativity, quality and attention to detail. There’s just no escaping it.”
So are residents really looking for flavor these days?
“Absolutely! Maybe it’s because of all the cooking shows and focus on healthy eating, but we’re finding more and more people looking forward to trying new things. Pushing us to do more. We’ve served sushi; buffalo wings with hot sauce; mashed potatoes with gorgonzola and bacon; turkey stuffed with cornbread, cranberries and caramelized onions; a corn, bacon au gratin green bean casserole.
“Sometimes, our guests want their selections more straightforward. So we’ve get creative by investing in new china and serving pieces to make things a little more interesting. We try to keep it fun.
“But whatever we do, it will always be a team effort. We’re blessed with such a talented, tireless, hard-working team of managers, servers, cooks, and more. Their passion is really what drives it here.”
